the concentrated and rectified grape juice (MCR) is a sugar syrup from grape juice and without odor.
Composition is 50% glucose and 50% de fructose.
Sugar concentration is around 870 g/l.
On behalf of the EU ,it is obtained by partial evaporation of grape juice with a sugar content superior to 62ºBrix.
Processes are applied on this grape juice to get rid of other components than sugars.
It is used in the process of chaptalization of wine with the application of EU strict regulation.
